There’s cold-pressed and processed walnut oil that you can find on the market. They vary a lot in quality and price and they are used for different purposes. The cold-pressed, unrefined oil shouldn’t be heated but the processed kind can be used for cooking.

Walnut oil tastes rich and nutty. The better the quality, the better the taste. Be careful: if you get the cold-pressed kind and try heating it, it can develop a bitter flavor. If your oil starts to smell off, it’s not good anymore and you should toss it. Store it in the fridge to keep it fresh longer.
