Ingredients

  • 2 cans of black beans
  • 1 large onion, chopped
  • 2-3 cloves of garlic, minced
  • 1-2 teaspoons cumin
  • 1 teaspoon chili powder
  • 4 cups vegetable or chicken broth
  • Salt and pepper to taste
  • Optional: diced tomatoes, bell peppers, carrots, or celery for added nutrition and flavor
  • Optional toppings: sour cream, cilantro, avocado, or shredded cheese

Instructions

  1. In a large pot, saute onions (and other vegetables if using) in a bit of oil until they’re soft and translucent. Add the garlic and cook for another minute.
