- Slice the tomatoes into rounds of about ¼ inch thickness. Sprinkle lightly with salt. Slice the fresh mozzarella cheese into rounds, aiming for a similar thickness to the tomatoes. Wash and pat dry the fresh basil leaves, keeping them whole or tearing them gently by hand for a rustic touch.
