Chickpea Salad Sandwiches are Your New Go-To Easy Vegan Lunch

Sandwiches are a classic lunch option, and it’s for good reason—they’re quick, easy, and portable. But nearly none of the classic sandwiches are vegan. You can’t do ham and cheese, or egg salad, or tuna salad… Or can you? Actually, using chickpeas, you can make something just as quick and delicious as a tuna salad sandwich—but totally plant-based! Here’s how.

All it takes is a can of chickpeas, some sunflower seeds for an optional crunch, vegan mayo, mustard, dill, red onion, and whatever sandwich fixings (like tomato and lettuce) that you like. It doesn’t even require any cooking, so this is a great one for the raw vegan crowd.

Just drain your chickpeas and mash them up until they’ve lost that round shape. Mix them up with some vegan mayo, a spoon of mustard, some dill, chopped red onion, and a handful of sunflower seeds. The consistency you’re going for is tuna salad-like. You can play around with the proportions until you find what’s right for your taste buds. Don’t forget to season with salt and pepper!
