When you or someone you love is gluten-free, you always want to be on the lookout for good alternatives to bread. Cloud bread is a great option to have because it is completely gluten-free and flour free, which means it is also very low in carbs. It is versatile, delicious, and only has two main ingredients!
Separate 4 eggs. Start by whipping the egg whites in a stand mixer or an electric hand mixer with 1/2 teaspoon of cream of tartar. Whip until the eggs have reached the firm peaks stage and then leave them to the side or put them in another bowl if you’re using a stand mixer.
Beat 2 ounces of cream cheese on high to soften. Then, add each egg yolk one at a time so they are completely incorporated. Finally, add in 1 teaspoon of Italian seasoning, 1/2 teaspoon of salt and 1/4 teaspoon of garlic powder.
Gently fold in the egg whites into the egg yolk mixture so you don’t deflate the meringue too much.
Scoop about 1/4 cup portions of the mixture onto a parchment lined baking and bake for about 20 minutes until the rounds are golden on the outside.
Enjoy for breakfast with avocado or for lunch for cheese and deli meat!
