When you or someone you love is gluten-free, you always want to be on the lookout for good alternatives to bread. Cloud bread is a great option to have because it is completely gluten-free and flour free, which means it is also very low in carbs. It is versatile, delicious, and only has two main ingredients!

  1. Preheat the oven to 300F.
  2. Separate 4 eggs. Start by whipping the egg whites in a stand mixer or an electric hand mixer with 1/2 teaspoon of cream of tartar. Whip until the eggs have reached the firm peaks stage and then leave them to the side or put them in another bowl if you’re using a stand mixer.
  3. Beat 2 ounces of cream cheese on high to soften. Then, add each egg yolk one at a time so they are completely incorporated. Finally, add in 1 teaspoon of Italian seasoning, 1/2 teaspoon of salt and 1/4 teaspoon of garlic powder.
  4. Gently fold in the egg whites into the egg yolk mixture so you don’t deflate the meringue too much.
  5. Scoop about 1/4 cup portions of the mixture onto a parchment lined baking and bake for about 20 minutes until the rounds are golden on the outside.

Enjoy for breakfast with avocado or for lunch for cheese and deli meat!

Who’s heard of cloud bread? ☁️ This low-carb & grain-free alternative to bread is made with just 3 ingredients: @clarence_court Leghorn White eggs, cream cheese & cream of tartar. Light & fluffy and perfect for sandwiches, I served mine with homemade guacamole, smoked salmon and a fried egg 🍳. Delicious! 😍👌 . Ingredients (serves 4): For the cloud bread: ☁️ 4 Clarence Court Leghorn White eggs ☁️ ¼ tsp cream of tartar ☁️ 60g cream cheese ☁️ A pinch of sea salt To serve: ☁️ 300g smoked salmon ☁️ 4 Clarence Court Leghorn White eggs, fried For the guacamole: ☁️ 1 large avocado ☁️ Juice of a lime ☁️ 1 red chilli, finely chopped ☁️ A pinch each of sea salt & black pepper. Method: 1. Preheat your oven to 150C & line a baking tray with baking paper. 2. Separate the eggs, then in a large bowl whisk the egg whites with the cream of tartar until light & fluffy (as if you were making meringues). 3. In a separate bowl, beat the egg yolks, cream cheese & salt together until smooth. 4. Carefully fold the two mixtures together then spoon onto the baking tray into 8 rounds. 5. Bake for 20 mins until golden brown, then carefully remove from the baking paper with a palette knife. 6. Meanwhile, make the guacamole by mashing the avocado, lime juice, chilli & seasoning together. Spoon onto the cloud bread, then top with smoked salmon and fried egg & serve.
