Colorful Monkfish Medallions Are Simply Delightful

If you’ve never heard of this particular dish, you’re not alone. It’s not exactly well-known, but it’s slowly but surely getting more popular around the world. This vibrant monkfish medallion recipe is ideal for dinner parties where you want to impress, so follow these simple steps to become a master at it!

Ingredients

For this recipe, you’ll need a pack of monkfish medallions, a red pepper, garlic, parsley, shallot, flaked almonds, and smoked paprika.

Roast Vegetables

Roast chopped pepper and garlic cloves on 400 F for 10-12 minutes, or until the pepper is soft.

Toast Almonds

Lightly fry almond flakes in olive oil for 1-2 minutes and when finished, pour into a small bowl. Next, add some more oil and fry the shallot for 3-4 minutes until soft. Season with salt and pepper.

Puree

Add the roasted pepper, garlic, toasted almonds, olive oil, lemon juice, and paprika into a blender and puree until smooth. This will end up being the delicious lively sauce.

Cook Monkfish

Cook the monkfish medallions in olive oil on medium to high heat for 3-4 minutes on each side. Fry until both sides are a lovely golden brown and the fish is opaque in the middle. Sprinkle on some paprika.

Serve

Take the medallions out and spoon on the pepper sauce. Sprinkle on the remaining almond flakes and serve confidently!
