CHEESY BACON POTATO SKINS 🤤💓 Monday means jacket night wohoo! HOWEVER this week I decided to mix it up again… I decided to load with veg, cheese & bacon! 🥓🧀 This was so so lush!! 😍 It does take a bit longer (I’ve only just finished hah) as you have to twice cook the potatoes but worth it I think bc they are so god damn cheesy & crispy! 🤪🙌🏻💫 They are SYN FREE if you use your (HEX A) 😍 Soft in the middle and super crispy on the outside! To cook the potato: (I always stab my potatoes with a fork, microwave them for 8 minutes & then put them in the oven for 45 mins) – but always check depending on how big your potato is! 🥔✨ To make the stuffed potato skins I then cut in half my cooked potato & scooped out the middle & popped in a bowl 💁🏻‍♀️ Then I mixed in chopped red onion 🧅, peppers, bacon 🥓 (fat removed) & then I topped with some grated cheddar cheese 🧀 (HEX A) 💛 Then I popped them back in the oven for about 10 minutes! ⏰ Then they were ready to serve & I topped mine with spring onion & a sprinkle of parsley & chilli flakes 🌶 . I served mine with a bed of salad (lettuce, tomato, spinach, peppers, red onion, cucumber & spring onions) 🥗 (1/2 speed) 😊 A change from a jacket & nice to mix it up & also a fab lunch idea too! Sour Cream and Chive
