These egg and bacon muffins are the perfect recipe to have on hand. Ingredient-wise it’s not that different from your classic bacon and eggs, but the presentation will give it an elegant touch, perfect for your brunch.
Ingredients
- 6 slices of bacon
- 6 large eggs
- 1/2 cup shredded cheddar cheese (or your favorite cheese)
- Salt and pepper to taste
- Chopped fresh chives or parsley for garnish (optional)
Instructions
- Start by preheating your oven to 375°F.
- Take each slice of bacon and cut it in half crosswise. Then, line each muffin cup with the bacon, forming a circle around the sides of the cup. The bacon will act as a delicious “crust” for your egg muffins.
- Gently crack one egg into each bacon-lined muffin cup.
- Sprinkle a pinch of salt and pepper. Then, top each muffin with a generous amount of shredded cheese.
- Place the muffin tin in the preheated oven and bake for about 12-15 minutes. Keep an eye on them as the baking time can vary depending on your desired level of egg doneness.
