Are you a fan of soup in the winter but don’t have the time, patience, or energy to mess with long lists of ingredients or complicated recipes that take forever? If that’s you, here is a soup recipe that is cheap, easy to make in only one pot, and totally plant-based!

Ingredients

  • Vegetable oil
  • Onion
  • Carrot
  • Celery
  • Red lentils
  • Salt
  • Pepper
  • Vegetable broth
  • Water

Instructions

  • Dice up your vegetables, meaning your onion, carrot, and celery.
  • Heat your vegetable oil in your soup pot over medium heat. Add onions and cook until translucent.
  • Add the carrot and celery. Season with salt and pepper. Cover and cook until the carrots start to get tender.
  • Add one part water and one part vegetable broth. Season with salt, pepper, and whatever seasonings you prefer.
  • Cover and cook for ten minutes.
  • Add red lentils. Stir, cover, and cook until the lentils are cooked through.
  • Taste the soup and adjust the seasoning as you like it.
  • Serve hot. Garnish with ground flaxseed for extra nutrition.
