How to Make Latkes the Fuss-Free Way

Crispy, delicious, and golden-brown, latkes are one of the best parts of Hanukkah. You may think they can be complicated to make, but it can really be quite easy if you keep things simple. Here’s how to do it.

Ingredients

  • 2 russet potatoes
  • 1 onion
  • Oil
  • 2 eggs
  • Salt
  • Pepper
  • 2 tablespoons flour

Instructions

  • Grate the potatoes and onions in a food processor if you have one or by hand with a grater.
  • Squeeze the water out of the potatoes and onions in a tea towel or cheesecloth. Try to really wring out as much of the moisture as possible so you can get crispier latkes.
  • Beat your eggs.
  • Stir together the potatoes, onion, flour, eggs, salt, and pepper. If your mixture is still liquidy, you can add more flour.
  • Heat oil on high heat.
  • Form latkes in your hands and fry on each side until golden brown.
  • Place fried latkes on a paper towel-lined serving dish to absorb excess oil.
  • Serve while hot and enjoy!

If you’re vegan, you can replace the egg with a bit of cornstarch to bind the latkes.

Serve with sour cream, apple sauce, or tzatziki if you want to get crazy!
