Tomato juice is a polarizing drink. Although the number one beverage on airplanes, the fruit juice (yes, fruit juice) is not to everyone’s taste… but perhaps the addition of this ingredient may sweeten up the deal. Tomatoes and peaches are both at their best during the summer, and the sweet and tart flavors go together nicely. But don’t take our word for it — have a sip.

Ingredients:

  • 2 large heirloom tomatoes
  • 2 peaches, halved and pitted
  • 1 lemon, juiced
  • Knob of ginger, peeled
  • Salt

Instructions:

  1. Place the tomatoes, peaches, and ginger in a blender and blitz until liquidized.
  2. Strain the mixture through a fine-mesh sieve.
  3. Add in the lemon juice and salt to taste. Serve chilled over ice.
