When you’re hosting, you want to be able to feed people tasty food without worrying about timings, techniques, or whether there will be enough of it. For this reason, tray bakes are your friend. Depending on the size of your oven, you can fit three trays in at once and relax, knowing that the oven is taking care of everything. Many tray bakes benefit from resting out of the oven for an hour or so, so timings are less crucial with these dishes.

White Fish And Green Bean

Ingredients:

  • 4 fillets of white fish
  • 1 cup of green beans
  • 1 cup of fresh tomatoes
  • ½ cup of white wine
  • 2 lemons
  • Salt
  • Olive Oil

Instructions:

Oil the tray, so that nothing sticks to it. Lay down the fish fillets, and then layer over the green beans. Slice some of the tomatoes in half, but leave others whole. Pour the wine over the top, and the juice of two lemons. Season with salt, and pepper if liked, before popping in the oven and baking at 350 °F for half an hour.

Halloumi and Potato

Ingredients:

  • 2 cups of small potatoes
  • 2 packs of halloumi cheese
  • 2 zucchinis
  • 1 handful of dill
  • 1 cucumber
  • Oil

Instructions:

Heat the oven to 350 °F. Oil a baking tray, then add the potatoes and sliced zucchinis. Roast for 20 minutes, before adding the sliced halloumi and chopped dill. If the tray is looking dry, add some tomato juice from a can of chopped tomatoes. Cook for another 15 minutes, then slice over the cucumber before serving.
