Green Chicken Curry Is The Easiest Dinner

Ingredients

  • 1 cup chicken stock
  • 1 sliced zucchini
  • 1 sliced onion
  • 1/4 cup coriander leaves
  • 400 ml can coconut milk
  • 1/4 cup green curry paste
  • 2 cups shredded barbecued chicken
  • 100 g green beans, trimmed and halved
  • 1 tablespoon oil
  • rice

Instructions

  • Get a saucepan and set the stove on high. Add the oil and once it’s hot start cooking the onion. Cook for 2 to 3 minutes until it becomes soft.
  • Add the curry paste and continue cooking for 1 more minute. Next, include the coconut milk and stock.
  • Wait for the mixture to start boiling. When it does, lower the heat and let it simmer with a lid for 10 minutes.
  • Add the zucchini, chicken and green beans. Let it simmer for 2 to 3 minutes, but without a lid.
  • When the beans are soft, you can season with salt and pepper.
  • Take the saucepan off the stove and add the coriander leaves. Serve the green chicken curry with rice on the side.
