Ingredients
- 1 cup chicken stock
- 1 sliced zucchini
- 1 sliced onion
- 1/4 cup coriander leaves
- 400 ml can coconut milk
- 1/4 cup green curry paste
- 2 cups shredded barbecued chicken
- 100 g green beans, trimmed and halved
- 1 tablespoon oil

Instructions
- Get a saucepan and set the stove on high. Add the oil and once it’s hot start cooking the onion. Cook for 2 to 3 minutes until it becomes soft.
- Add the curry paste and continue cooking for 1 more minute. Next, include the coconut milk and stock.
- Wait for the mixture to start boiling. When it does, lower the heat and let it simmer with a lid for 10 minutes.
- Add the zucchini, chicken and green beans. Let it simmer for 2 to 3 minutes, but without a lid.
- When the beans are soft, you can season with salt and pepper.
- Take the saucepan off the stove and add the coriander leaves. Serve the green chicken curry with rice on the side.
