Grilled Cheese With Mayo is Changing the Sandwich Game

The idea of using mayo in place of butter for grilled cheese might raise some eyebrows, but those who’ve tried it are often converted by the crispy, flavorful results. Mayo, which primarily consists of oil and egg yolk, spreads more easily than butter, especially when cold. It also has a higher smoke point, meaning it doesn’t burn as quickly as butter does. This results in an evenly toasted, golden-brown crust that’s hard to achieve with butter. Here’s how to make it. 

Ingredients

  • Your choice of bread
  • Mayonnaise
  • Cheese (cheddar, mozzarella, or any cheese that melts well)
  • Optional: additional fillings like tomato, ham, or bacon

Instructions

  1. Spread a thin layer of mayo on one side of each slice of bread. Place one slice, mayo side down, in a non-stick skillet over medium heat. Add your cheese (and any additional fillings) on top of the bread in the skillet. Top with the second slice of bread, mayo side up. 
  2. Cook the sandwich for a few minutes on each side, flipping once, until the bread is golden brown and the cheese has melted. 
  3. Remove the sandwich from the skillet, let it cool for a moment, then cut and serve warm.
