When the weather closes in, many of us seek comforting dishes that will bring a little warmth back. This polenta bake recipe is excellent because it is hearty food that uses summery flavors to combine comfort with deliciousness. This recipe serves four people.
Ingredients:
- One packet of ready-to-eat polenta
- One ball of mozzarella
- A tin of tomatoes
- 1 onion
- 2 cloves of garlic
- 1 jar of black olives
- 2 zucchinis
- Dried oregano
Instructions:
- Start by making a tomato sauce.
- Fry chopped onion and garlic in oil until softened, and then add the tin of tomatoes. Allow to heat through, you may wish to add a little seasoning. If the sauce is too tart, a splash of milk will reduce the acidity of the tomatoes.
- Next, fry the sliced courgettes until they are cooked through. Shred or slice the mozzarella into small pieces.
- Take a large roasting tin and oil it so that the bake won’t stick.
- Now, layer slices of the polenta with pieces of mozzarella, courgettes, and tomato sauce.
- Sprinkle the olives throughout.
- When you have constructed all of the layers, season the top with salt, pepper, and dried oregano. If you wish, you could also grate some cheese over the top.
- Bake in an oven heated to 200 °C (390 °F) for half an hour, or until the top is starting to crisp. Serve with a green salad and savor the flavors of summer even in the depths of winter.
