Homemade Egg Salad With a Twist

  • 6-8 Hardboiled eggs
  • 2 large Vidalia onions
  • Mayo to taste
  • Salt and Pepper to taste
  • Paprika to taste
  • 1-2 Bunches of scallions

  2. Once the onions are fully cooked, layer them on top of the eggs
  3. Thinly slice the scallions and add to the salad
  4. Add mayo according to how creamy or dry you prepare the salad
