Homemade Linzer Cookies are Screaming Your Name

Linzer cookies are sandwich cookies with a gorgeous raspberry filling. Though sandwich cookies can be hard to make, these are surprisingly easy!

Ingredients

  • 1 cup of raspberries
  • 1 cup of sugar
  • 1 tablespoon of lemon juice
  • 1 cup of flour
  • 1 cup of almond flour
  • 10 tablespoons of softened unsalted butter
  • Pinch of salt
  • 1/2  teaspoon of lemon zest
  • 1 teaspoon of vanilla extract
  • 1 egg

Recipe

  1. Cook the raspberries, sugar, half the sugar, and lemon juice in a pot and for 10 minutes over medium until it turns into a thick jam. Refrigerate for 2 hours.
  2. Whisk the two flours together in a small bowl. 
  3. Cream the butter, 1/2 cup of sugar, salt, lemon zest, and vanilla in a bowl for 3 minutes. Add in the egg and mix for 1-2 minutes longer. 
  4. Fold the flours in with a spatula until just combined. 
  5. Wrap up the dough and chill for 1-2 hours. 
  6. Flour a surface and the top of the top and roll out to 1/4 inch thickness. 
  7. Use a 2 1/2 inch cutter to stamp out the cookies, and then stamp out the center of half of them with a 1/2 inch cutter. 
  8. Bake at 350 F for 12 minutes or until golden, cool, and then add the jam to the bottom half. Sandwich with the cut out cookie on top, and enjoy!
