Ingredients
You’ll need some sweet potato, cauliflower, lentils, garlic, a shallot, coriander, coconut milk, Zanzibar spice mix, vegetable stock powder, and some baby spinach.
Roast Your Vegetables
First, chop your sweet potato and cauliflower into small chunks, around an inch in diameter. Fill up two baking trays and season with salt, pepper, and olive oil. Roast for 18 minutes, or until tender.
Make Your Creamy Lentil Sauce
Fry the diced shallot, minced garlic, and some Zanzibar curry mix in a pan on medium-high heat. After 3-4 minutes, add a tin of coconut milk, vegetable stock powder, and lentils. Season with salt and pepper as you simmer for 4-5 minutes.
