How to Use the Whole Beet

Beets are an amazing vegetable to use in your cooking. They are high in vitamins and minerals like potassium and have a wonderful naturally sweet taste. They also come in a variety of types and colors, which makes them a fun addition for slightly monotoned plates. Although most people use only the beet itself, you can actually eat the whole vegetable, including the leaves. Try these recipes next time you’re in a rut and be wowed my beets.

Beet Top Greens

The green part of the beet is totally edible and delicious. When you cook them, first blanch them to cook them slightly and so their vivacious green color remains. Then, sautee them simply with garlic, salt, pepper, and lemon juice, and you have a fun new take on dark leafy greens.

Grilled Beets

Because beets are so solid, they are perfect for the grill. Just grill them as you would any other vegetables, and leave them whole as a side dish or use them in a salad. Beets go well with cheese like goat cheese but are really versatile.
