If you’re entertaining a crowd, a meal made up of lots of small dishes is ideal. Here are some ideas for delicious yet simple dishes.
Spinach and Feta Parcels
Use some ready-rolled filo pastry, and cut into small squares. In the center of each square, place some wilted spinach and some crumbled feta. Fold the edges of the pastry into the middle and place in the oven for about 10 minutes, until the pastry has cooked.
Chickpea Salad
Add some chickpeas to a large bowl with some chopped lettuce, tomato, cucumber, scallions, and olives. Season with salt and pepper and drizzle over some extra virgin olive oil.
Roasted Mediterranean Veg
In a large pan, add some chopped zucchini, red onion, bell pepper, and eggplant. Add plenty of thyme, basil, oregano, smoked paprika, and some extra virgin olive oil, and roast in the oven for 30-40 minutes.
Homecooked Rosemary Fries
Take some large way potatoes and cut them into batons. Parboil these for about 5 minutes, and then drain well. Add them to a baking tray and coat with extra virgin olive oil, dried rosemary, and plenty of sea salt. Bake in the oven for 30-40 minutes, until slightly browned.
