Baked goods absolutely exist in the vegan world, but sometimes they are not as delicious as the real deal. However, these cookies are about to prove you wrong. These cookies are so yummy no one will ever know they are vegan! So try this recipe as soon as you can.

Instructions

  1. In a large bowl, mix 50ml of almond milk, 80g of sugar, 1 teaspoon of vanilla extract and 150g of peanut butter until they are well combined.
  2. Sift 120g of all-purpose flour into the mix, as well as 1 teaspoon of baking powder and 1/2 teaspoon of baking soda.
  3. Mix these dry ingredients into the wet carefully with a wooden spoon or a spatula so you don’t lose the air from sifting.
  4. Roughly chop 50g of pecans or whatever type of nuts you like, and add them to the dough, along with 40g of chocolate chips or chunks.
  5. Put the dough in the fridge for 20 minutes.
  6. Take a small amount of dough and roll it into a ball and put them on a parchment-lined baking sheet. Flatten the balls into a patty with a fork and make a crisscross design.
  7. Bake in the oven at 180C for 10 minutes and then cool completely before eating!
