Instant Pot has to be one of the greatest cooking inventions of all-time. It’s designed to be both a pressure cooker and a slow cooker, meaning multiple types of recipes can quickly be prepared by using it. Some people have tried and true slow cooker recipes, but for those who are just getting acquainted with their Instant Pots, consider trying a few of these ones.

Mexican Chicken Tortilla Soup

Soups and stews are some of the best things to cook in an Instant Pot. Mexican Chicken Tortilla Soup would traditionally call for some sauteed veggies in a pan, which would need to be transferred to a slow cooker. With an Instant Pot, you can use the saute function to brown the veggies, and then combine the rest of your ingredients for a nice slow-cooked soup.

Mujaddara

This traditional Middle Eastern lentil and rice dish can take a while to cook if the lentils are dry. The lentils and rice mixture can be pressure cooked in the Instant Pot much more quickly than in a traditional pot. Thankfully, all you’ll need to do is saute some onions to garnish the dish at the end.

Borscht

For those that grew up with Eastern European family members, you will be well-acquainted with this classic borscht soup. The soup is made with cabbage and beets and simmered for a long time, which gives it that vibrant red color. Give this a try in your Instant Pot and you won’t need to keep checking on it.
