This dish is always a great success when hosting friends or family for dinner. The wine makes the chicken very tender and juicy. Just remember, never cook with a wine you wouldn’t agree to drink.
Ingredients:
- 6 boneless chicken thighs
- 1 chopped onion
- 1 cup of white wine
- 300 g chopped portabella mushrooms
- 1/2 cup chopped parsley
- 2 finely chopped garlic glove
- Salt and pepper
Instructions:
- In a wide pan warm the olive oil and then add the onion and the garlic. Fry for 5 minutes, stirring occasionally.
- Add the chicken, fry for 4 minutes on each side until the chicken is completely done.
- Add the mushrooms and stir for 3 minutes. Season with salt and pepper.
- Add in the wine, bring to boil and then reduce to low heat, cover and cook for another 10 minutes. Add the chopped parsley, stir and cook for another 3 minutes.
- Serve with white rice and enjoy.
