Light And Delectable Vegan Potato Salad

Potato salad can often be thought of as a really heavy picnic or cookout side dish. And even though most of them are covered in a mayonnaise dressing, making it lighter, healthier, and fancier is super easy to do. This vegan potato salad is easy to throw together for a last minute party or when you’ve had a long day and still want something hearty and delicious to eat, so make it tonight!

Instructions

  1. Cut up some new potatoes into rounds.
  2. Put them in a pot with cold water and salt. Cold water is important because as it boils, it will evenly cook the potatoes.
  3. Once the water is boiling, bring it down to a simmer until the potatoes are fork tender.
  4. Drain and rinse the potatoes, and then put them in a bowl with a little apple cider vinegar, salt, and pepper.
  5. In another bowl, make the dressing. Combine spicy brown mustard with salt, pepper, garlic, apple cider vinegar, and red wine vinegar. Whisk until combined. Then, slowly emulsify by adding in olive oil. When the mixture has thickened, pour over the potatoes.
  6. Add in parsley and chopped green onion, and toss together until everything is well coated. Enjoy!
