There is nothing quite like Thanksgiving recipes, bursting with fall flavor, family, and friends. While it’s still a month away, fall is finally in full swing so we’re raking in the leaves as well as our best-kept fall recipes. That’s why we’re sharing this top-secret butternut squash pie recipe.
Ingredients:
- 1 package of cut-up butternut squash
- 1/2 cup sugar
- 3 eggs
- 1 pint of non-dairy milk
- 1/2 stick of butter or non-dairy alternative
- 1 tablespoon of Trader Joe’s Pumpkin Pie seasoning or cinnamon and a sprinkle to garnish
- 1 pie shell
Instructions:
- Preheat the oven to 350 degrees and check prepping instructions for the pie shell.
- Cook squash on the stovetop by cooking it with the milk, and add in the butter to melt for about 20 minutes.
- Once all the ingredients are softened and mixed well, put it into a bowl and add the rest of the ingredients in with it. Puree with a stick blender.
- Pour the puree into the pie shell and bake in the oven at 350 degrees for approximately one hour or until the pie is puffy
- Once cooked, sprinkle the top with more pumpkin pie spice. Serve with Thanksgiving turkey or even as a dessert with a scoop of vanilla ice cream and enjoy!
