This easy-to-make recipe is the exact thing your appetizer platter needs! It’s delectable and doesn’t take long to make.
Ingredients:
- ½ cup each grated cheddar and Monterrey Jack
- 2 tablespoons each sour cream and chopped chives
- 4 large flour tortillas
- 2 avocados, peeled and cubed
- 2 cups of shredded deboned chicken
- 1 bell pepper, chopped (remove core and seeds first)
- 1 lime, juiced
- ½ red onion, chopped
Method:
- Mash the avocado and mix in the lime juice. Don’t mash the avocado too finely. There should still be small chunks.
- Add in the chicken, cheddar, Monterrey Jack, bell pepper, red onion, sour cream, and chives. Stir all the ingredients until they are thoroughly mixed.
- Lay out the large tortillas.
- Spread a thin layer of the chicken and avocado mixture over each tortilla. Don’t spread it right up to the edge of the tortilla. Stop spreading when you get close to the edge.
- Roll each tortilla up as tightly as you can. Cut the edges off. Slice the remaining tortilla into 1-inch pieces.
