Victoria sponge is a classic British cake, and is totally delicious, with it’s layers of sponge and whipped cream frosting. The addition of fresh fruit makes this cake a real show stopper, but in winter it’s easier to use jam or compote. Check out this recipe which promises to produce a stunning victoria sponge every time.
Ingredients
- 2 cups of plain flour
- 1 1/2 teaspoons of baking powder
- 3 eggs
- 3/4 cup unsalted butter
- 3/4 cup caster sugar
- 2 tablespoons of milk
For the frosting:
- 1/4 cup unsalted butter
- 1/4 cup whipping cream
- 1/2 cup icing sugar
- 1/2 a jar strawberry jam
Instructions
- Cream the butter and sugar together in a large bowl.
- Sift in the flour and baking powder.
- Whisk in the eggs and the milk, stir well until you have a smooth batter.
- Pour into a greased, lined cake tin, and bake in the oven at 350 degrees F for 45 minutes.
- Once the cake is cooked and cooled, slice it in half horizontally.
- Whisk the butter, whipping cream and icing sugar together.
- Spread the frosting and the jam along one sides of one half of the cake. Use this to sandwich the two halves together again.
- Frost the top of the cake if you wish, or sprinkle with icing sugar.
Use this classic cake to feed hungry guests at tea time, or to celebrate special occasions.
