The Best Ever Victoria Sponge Recipe

Victoria sponge is a classic British cake, and is totally delicious, with it’s layers of sponge and whipped cream frosting. The addition of fresh fruit makes this cake a real show stopper, but in winter it’s easier to use jam or compote. Check out this recipe which promises to produce a stunning victoria sponge every time.

Ingredients

  • 2 cups of plain flour
  • 1 1/2 teaspoons of baking powder
  • 3 eggs
  • 3/4 cup unsalted butter
  • 3/4 cup caster sugar
  • 2 tablespoons of milk

For the frosting:

  • 1/4 cup unsalted butter
  • 1/4 cup whipping cream
  • 1/2 cup icing sugar
  • 1/2 a jar strawberry jam

Instructions

  1. Cream the butter and sugar together in a large bowl.
  2. Sift in the flour and baking powder.
  3. Whisk in the eggs and the milk, stir well until you have a smooth batter.
  4. Pour into a greased, lined cake tin, and bake in the oven at 350 degrees F for 45 minutes.
  5. Once the cake is cooked and cooled, slice it in half horizontally.
  6. Whisk the butter, whipping cream and icing sugar together.
  7. Spread the frosting and the jam along one sides of one half of the cake. Use this to sandwich the two halves together again.
  8. Frost the top of the cake if you wish, or sprinkle with icing sugar.

Use this classic cake to feed hungry guests at tea time, or to celebrate special occasions.
