Pho is a Vietnamese dish that has taken on new life in recent years and become just as well recognized as ramen. It is essentially a noodle broth that pairs very well with beef, chicken, or tofu. Use this recipe to make your own version of pho at home.
Ingredients
- Pho stock cube (find in Asian supermarket stores). If you can’t find one you can use a vegetable stock cube
- 1 inch of ginger root
- 1 white onion
- 1 green chili
- 4 cloves of garlic
- 2 medium tomatoes
- 10 ounces of noodles
- 8 ounces of firm tofu (can also use chicken or beef if preferred)
- A handful of coriander
- 1 tablespoon of cooking oil
- Juice of half a freshly squeezed lemon
- Salt
- Chili flakes
Instructions
- Chop up your onion into small chunks. Fry in your oil for about 5 minutes before adding your chopped garlic and ginger. Throw in your chopped green chili if you want a bit more spiciness. Add your pho stock cube and about 2 cups of water. Add your chopped tomatoes to this and simmer for about 5 minutes. Add a generous pinch of salt.
- In a separate frying pan, fry your chunks of firm tofu (or chicken/beef) in some cooking oil, turning until brown on each side. You can add soy sauce to flavor them.
- Cook your noodles in a separate pan of boiling water. When they are cooked, add them to your pan with your vegetables and pho stock cube.
- Add your tofu to your main saucepan along with your noodles and broth. Add a generous squeeze of lemon juice and garnish with some fresh coriander. Add salt and chili flakes to taste.
