Potatoes are the Secret Ingredient in This Cinnamon Roll Recipe

Don’t be fooled by the unconventional addition. Mashed potatoes take these rolls to the next level, adding subtle sweetness and incredible softness. Once you try this recipe, you’ll never want to go back to the classic version. 

Ingredients:

Dough:

  • 1 cup warm milk
  • 1 tablespoon active dry yeast
  • 1/4 cup sugar
  • 1 1/2 teaspoons salt
  • 1 cup mashed potatoes (cooled)
  • 2 large eggs
  • 3 1/2 to 4 cups all-purpose flour, plus extra for dusting

Filling:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1 tablespoon ground cinnamon

Instructions:

  1. Combine warm milk, yeast, and sugar in a large bowl. Let sit for 5-10 minutes.
  2. Add salt, mashed potatoes, and eggs to the yeast mixture and whisk until combined.
  3. Slowly incorporate flour, until a soft dough forms. Knead on a lightly floured surface.
  4. Place dough in a greased bowl, cover with plastic wrap, and let rise in a warm place for 1-2 hours.
  5. In a small bowl, cream together softened butter, brown sugar, and cinnamon.
  6. On a lightly floured surface, roll out the dough into a 12×18-inch rectangle. Spread the cinnamon sugar filling evenly over the dough.
  7. Starting from the long end, tightly roll the dough into a log. Cut the log into 12 even slices.
  8. Arrange rolls in a greased 9×13-inch baking dish. Cover with plastic wrap and let rise for another 30 minutes.
  9. Preheat the oven to 375°F. Bake rolls for 20-25 minutes.
  10. Drizzle the warm glaze over the baked cinnamon rolls and enjoy!
