Pumpkin Spice Overnight Oats For the Winter

As soon as winter hits, there’s nothing like a good helping of pumpkin spice everything. And since breakfast is the most important meal of the day, we figured we’d deliver this awesome pumpkin spice overnight oats recipe to brighten up your morning!

Ingredients

To make this you really only need a few simple ingredients. You’ll also need all of the spices you would typically use to make the filling for a pumpkin pie.

Spices:

  • A dash of salt
  • 1 Tbsp of chia seeds
  • 1/8 Tsp ground cloves
  • 1 Tsp ground cinnamon
  • 1/4 Tsp ground nutmeg

Wet Ingredients:

  • 1/2 cup of unspiced pumpkin puree
  • 1/4 cup of Greek yogurt, plain
  • 1/2 Tsp of vanilla
  • 2/3 cup of milk of vegan alternative, no sugar
  • 1/2 cup of rolled oats
  • 3 Tbsp of maple syrup

Instructions

Combine the wet ingredients with the spices and stir them together until evenly mixed. Once that’s finished, select a jar that has a lid. The lid will need to be tight, as the jar must be airtight when closed.

The oats will need to be refrigerated for a minimum of four hours. True to their name, they’ll need to be kept overnight, which will make them nice and ready when you wake up. Just pull them out in the morning, and eat them on the go. You can also save them to snack on, while you work.
