Ramen Recipes To Warm Up With

Ramen is a popular dish for good reason. This savory, spicy, salty soup can provide you with lots of essential nutrients, and it tastes delicious! It’s the ideal dish for a cold fall day, so check out these simple recipes to create your own bowl of ramen heaven.

Mushroom and Broccoli Ramen

Ingredients (to serve 2):

  • 1 cup of chestnut or button mushrooms
  • 2 teaspoons of red miso paste
  • 1/2 cup of brocolli florets
  • 1 teaspoon of soy sauce
  • 2 tablespoons of oil
  • 1 red chilli
  • 2 cloves of garlic
  • Small piece of ginger
  • Water
  • 2 noodle nests

Instructions:

  1. Heat the oil in a large pan and add the sliced garlic, chilli and ginger. Fry for 2 minutes, then add the mushrooms and brocolli florets.
  2. Add the miso paste and soy sauce and about half a cup of water. Cook for 5 minutes.
  3. Add the noodle nests and more water as needed, cook for 2 minutes until the noodles are tender.
  4. Pour into bowls and eat immediately.

Beef Stock Ramen

Ingredients (to serve 2):

  • 2 noodle nests
  • 1 beef stock cube
  • 1 tablespoon of tomato puree
  • 1 teaspoon of soy sauce
  • 2 cloves of garlic
  • 1 red chilli
  • Small piece of ginger
  • 2 handfuls of fresh spinach
  • 2 tablespoons of oil
  • Water

Instructions:

  1. Fry the garlic, ginger and chilli in the oil for 2 minutes.
  2. Add the stock cube, tomato puree, soy sauce, spinach and some water. Cook for 5 minutes.
  3. Add the noodle nests and more water as needed, cook for 2 minutes until the noodles are tender.
  4. Serve immediately.
