Mushroom and Broccoli Ramen
Ingredients (to serve 2):
- 1 cup of chestnut or button mushrooms
- 2 teaspoons of red miso paste
- 1/2 cup of brocolli florets
- 1 teaspoon of soy sauce
- 2 tablespoons of oil
- 1 red chilli
- 2 cloves of garlic
- Small piece of ginger
- Water
- 2 noodle nests
Instructions:
- Heat the oil in a large pan and add the sliced garlic, chilli and ginger. Fry for 2 minutes, then add the mushrooms and brocolli florets.
- Add the miso paste and soy sauce and about half a cup of water. Cook for 5 minutes.
- Add the noodle nests and more water as needed, cook for 2 minutes until the noodles are tender.
- Pour into bowls and eat immediately.
Beef Stock Ramen
Ingredients (to serve 2):
- 2 noodle nests
- 1 beef stock cube
- 1 tablespoon of tomato puree
- 1 teaspoon of soy sauce
- 2 cloves of garlic
- 1 red chilli
- Small piece of ginger
- 2 handfuls of fresh spinach
- 2 tablespoons of oil
- Water
Instructions:
- Fry the garlic, ginger and chilli in the oil for 2 minutes.
- Add the stock cube, tomato puree, soy sauce, spinach and some water. Cook for 5 minutes.
- Add the noodle nests and more water as needed, cook for 2 minutes until the noodles are tender.
- Serve immediately.
