Shaved Asparagus Salad

Asparagus has so many nutritional benefits, including Iron and vitamin A and C. This vegetable is best in the springtime and there are so many ways to prepare it. If you want to keep it at it’s freshest, use it uncooked in this shaved asparagus salad. Simply take a potato peeler, shave each stalk and toss it together in a simple lemon vinaigrette. This can be added to sandwiches or eaten on its own!

Apricots

Apricots are a delicious orange stone fruit that is native to the Medeterian region of the world. This fruit is juicy but not overly sweet and can be added to both sweet and savory dishes. A great way to prepare this is by halving it and throwing it on the grill. The apricots can then be used in salads with arugula and goat cheese or served atop ice cream. The possibilities are endless!
