Tasty and Simple Sheet Pan Black Bean Tacos

If you love tacos but you’re not in the mood for meat, then have we got the meal for you. Filled with melted cheese, fresh veg, and juicy black beans, here’s how you can prepare a scrumptious meal of sheet pan black bean tacos.

Ingredients

  • 1 15-ounce can of black beans
  • 1 cup shredded Mexican cheese
  • 5 tablespoons neutral oil
  • 1 teaspoon salt
  • 8 corn tortillas
  • 1 small onion
  • 1 tablespoon taco seasoning
  • sour cream

Instructions

  1. Preheat oven to 425°F and place a large skillet over medium heat. Warm 2 tablespoons oil and add onion and a 1/2 teaspoon salt. Stir occasionally and cook for about 7 minutes until softened. Add the taco seasoning and another tablespoon of oil for 30 seconds.
  2. Continue stirring and add the black beans to the skillet along with the remaining 1/2 teaspoon salt, and 1/2 cup water. Mash some the beans a bit and allow to cook for a further 2 to 3 minutes.
  3. With the remaining oil, grease a sheet pan. Spread out the tortillas on the pan and spoon a quarter cup of bean mixture onto each tortilla. Top off each tortilla with 2 teaspoons of cheese.
  4. Fold each tortilla to create a taco and bake them until they are golden brown on the bottom. Flip and cook on the other side for another 5 to 8 minutes until crisp as well.
  5. Serve with sour cream.
