Crepes, the delicate and thin cousins of pancakes, can be dressed up sweet or savory. These paper-thin pastries can seem intimidating to make but with a simple recipe and a bit of practice, you can whip up a batch of delicious crepes from the comfort of your own kitchen.
Ingredients
- 1 cup all-purpose flour
- 1 1/2 cups whole milk
- 2 large eggs
- 1 tablespoon granulated sugar (for sweet crepes) or a pinch of salt (for savory)
- 2 tablespoons melted butter, plus more for cooking
Instructions
- Combine the flour, milk, eggs, sugar (or salt), and melted butter. Mix until the mixture is smooth and bubbles form on top, about 30 seconds.
- Heat a 9-inch non-stick skillet or crepe pan over medium heat. Lightly brush with melted butter. Pour about 1/4 cup of batter into the center of the pan. Tilt and rotate the pan immediately to spread the batter evenly.
- Cook until the underside is lightly golden. Loosen the edges with a spatula, then flip the crepe. Cook for another 1 minute on the other side. Transfer the finished crepe to a plate. Continue with the remaining batter, brushing the pan with butter as needed.
- Serve the crepes warm with your favorite toppings.
