From cookies to cupcakes and everything in between, buttercream is a staple used to add richness and decoration to all kinds of baked goods. Its velvety texture and Goldilocks-just-right level of sweetness make it the perfect blank canvas for almost any flavor imaginable, and its creamy consistency makes it as easy to work with as it is to prepare. Read on for our go-to recipe.

Ingredients:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 teaspoon salt
  • 1-2 teaspoons pure vanilla extract (or other flavor extracts of your choice)
  • 2-4 tablespoons milk (adjust as needed for consistency)
  • Food coloring

Instructions:

  1. In a large mixing bowl, use an electric mixer to beat the softened butter until creamy.
  2. Add the confectioners’ sugar one cup at a time, beating well after each addition.
  3. Mix in the salt and your preferred flavoring. You can experiment with other extracts like almond, lemon, or even add a tablespoon of cocoa powder to make a chocolate buttercream.
  4. If the frosting is too thick, add 1-2 tablespoons of heavy cream or milk and continue beating until you reach your desired consistency. If it’s too thin, add more powdered sugar.
  5. Taste and adjust the flavor or sweetness by adding more flavor extract or confectioners’ sugar if needed.
  6. Beat the frosting on medium-high for 2-3 minutes until it becomes light, fluffy, and well combined.
  7. If you’d like to make colored frosting, add your food coloring one drop at a time and stir with a spatula until the color is fully incorporated. Keep going until you reach your desired shade, keeping in mind that most food dyes tend to darken slightly over time.
  8. Use the buttercream immediately to frost cakes, cupcakes, or cookies. Alternatively, you can store it in an airtight container in the refrigerator for a short period, but allow it to come to room temperature and re-whip before using.

If you’ve ever had a sudden craving for a sweet treat, you’ll know how disappointing it can be when you open the cookie jar or cake tin, only to find it empty. While store-bought treats are always an option, these banana cookies are so easy to whip up, it may actually be quicker to make them than to make your way out to the store! They are also healthier than your average cookie, as they are partly sweetened with banana and contain plenty of protein and healthy fats in the form of peanut butter.

Ingredients (Batch of 12 cookies):

  • 2 ripe bananas
  • 2 tablespoons of peanut butter
  • 3/4 cup and 2 tablespoons of porridge oats
  • 3/4 cup of unsalted butter
  • 1/2 teaspoon of cinnamon
  • 2 tablespoons of dark chocolate chips

Instructions:

  1. Preheat the oven to 390 Β°F. Line a baking tray with parchment paper.
  2. In a large mixing bowl, mash the bananas until smooth.
  3. Melt the butter in a pan or microwave and then pour over the bananas, mixing well.
  4. Pulse the oats in a food blender so that they are finer and easier to mix in. Add these to the banana and butter mix and stir well to combine.
  5. Stir in the peanut butter, cinnamon, and chocolate chips.
  6. The mix will be quite wet, so lightly flour a surface before rolling out the cookie dough.
  7. Cut the cookies into shapes and place them on the baking tray.
  8. Bake for 10 – 15 minutes, and allow to cool for at least 15 minutes once you remove them from the oven.

Cooking is both an art and a science, and, like any science project, the success of a dish will often depend on getting ingredient ratios right. This is pretty straightforward when following a recipe as written, but things become a bit more complicated when attempting to double it. Simply multiplying all ingredients by two can alter the final texture and flavor, so it’s essential to understand where you may need to make adjustments. Read on to learn more about how to successfully double a recipe.

Seasonings & Spices

In general, it’s fine to multiply by two when it comes to the core ingredients that constitute a recipeβ€”things like meat, veggies, and grains. Where you’re more likely to run into trouble is with spices, which can pack a disproportionately strong punch when doubled. Start by adding spices at a 1.5 ratio, then taste your dish and adjust as needed. This also goes for alcohol, when adding too much can impart a bitter taste.

Time & Temperature

Larger quantities of food often require longer cooking times, as differences in volume can affect heat distribution. While this definitely doesn’t mean doubling the cook time, it is important to be aware of to avoid under or overcooking. Use a thermometer for meats or a clean toothpick for baked goods to check for doneness at the time indicated by your recipe. If it needs more time, continue to check every 5 minutes until done.

Proper Cookware

As with time and temperature, it’s essential to use proper-size cookware when working with larger quantities of food. Crowding a pot with too many ingredients can prevent browning and lead to unevenly cooked dishes, while overfilling a baking pan with too much batter can cause it to spill over or develop a dense texture.

Even the most experienced bakers can make mistakes that will totally ruin their thoughtful creations. So, whether you’re baking cookies, cakes, or pastries, avoiding these common blunders can be a true game changer.

Overmixing Batter

It’s tempting to keep stirring until every last lump is gone, but overmixing batter can lead to tough, dense baked goods. Instead, mix until just combined to avoid activating too much gluten, which can result in a chewy texture.

Inaccurate Measurements

Baking is all about precision, so settling for eyeballing your ingredient isn’t recommended and can completely throw off your recipe’s balance. Invest in a set of quality measuring tools to maintain utmost accuracy.

Baking at the Wrong Temperature

Oven temperatures can vary widely, so relying solely on the dial’s setting may lead to undercooked or burnt treats. Invest in an oven thermometer to ensure your oven is truly preheated to the correct temperature.

Overbaking

It’s easy to get distracted and leave your baked goods in the oven for a minute too long, but even a slight overbake can result in dry, crumbly treats. Make sure to pay extra attention to your baked goods toward the end of the baking time.

Make your own cinnamon twists and enjoy a chewy and wonderfully sweet pastry that will melt in your mouth. These twisted pastries, coated in a sugary cinnamon glaze, are a perfect treat for breakfast or as a delightful snack. Here’s a recipe for how to make them.

Ingredients

  • 1 pack of active dry yeast
  • 1/2 cup of warm milk (around 110Β°F/43Β°C)
  • 3/4 cup of granulated sugar
  • 1/2 cup of melted unsalted butter
  • 1 large egg
  • 3 cups of all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 cup of icing sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a bowl, combine warm milk, sugar, and active dry yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, whisk together melted butter and egg. Add the yeast mixture and stir to combine. Gradually add the flour and salt, kneading until a soft dough forms. If the dough is too sticky, add more flour a little at a time. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-1.5 hours, or until it doubles in size.
  3. Preheat your oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper. Punch down the risen dough and roll it out on a floured surface into a rectangle. In a small bowl, mix together sugar and ground cinnamon for the filling.
  4. Brush the rolled-out dough with melted butter and sprinkle the cinnamon sugar mixture evenly over the surface. Fold the dough in half to encase the cinnamon sugar, then cut the dough into strips. Twist each strip and place them on the prepared baking sheet.
  5. Bake in the preheated oven for 12-15 minutes, or until golden brown.
  6. In a bowl, whisk together icing sugar, milk, and vanilla extract until smooth. Drizzle the glaze over your warm cinnamon twists. Allow the twists to cool slightly before serving.

When you’re first starting out in the culinary world, it’s not always easy to know which path to take. Perhaps the biggest dilemma that many culinary enthusiasts ponder is whether or not they should specialize in cooking or baking. Obviously the legendary chefs do both, but oftentimes it’s good to pick one or the other when you’re starting out. So which of the two paths is an easier path to start off with?

Why Cooking Might Be Easier

As frustrating as it might be for you to hear, the truth is that it depends. In some ways, cooking is a lot easier than baking when you’re first starting out, and the reason is because it’s very flexible. You don’t always have to follow recipes exactly as they’re written. To compare it to music, it’s like jazz. You can put your heart and soul into it a little bit more and see where things go.

Why Baking Might Be Easier

However, on the other side of the coin, some people find that the rigidity of baking is precisely the thing that makes it easier! While yes, baking leaves a lot less breathing room as far as making mistakes, there’s a bit of comfort in that. Some people find a certain comfort in following rules exactly as they’re written. And if you’re one of those peopleβ€”if you prefer “classical music”, as it wereβ€”then baking might be the right path for you instead.

From cookies to cupcakes and everything in between, buttercream is a staple used to add richness and decoration to all kinds of baked goods.

  • 3 eggs
  • 6 ounces of self-raising flour
  • 6 ounces of sugar
  • 6 ounces of butter
  • 10 ground up cardamom pods
  • A cup of tea with two teabags in
  • 1 teaspoon of ground cinnamon
  • 1/2 a teaspoon of ground cloves

  1. Cream the butter and the sugar together until you have a consistent and smooth fluffy paste. Make sure it’s not grainy, and then you can add your eggs one at a time and beat into the mixture.
  2. Meanwhile, boil a kettle and brew your cup of tea with two bags in it for about 5-10 minutes. Allow this to cool down before adding it gradually into your cake mixture. Now you can add your flour gradually by sieving it into the mixing bowl.
  3. Add your cinnamon, cardamom, and cloves to your batter. Mix in well. Put the mixture in a baking tin and bake on 350Β°F for 30 minutes. You can add a butter cream icing if you like to give it extra oomph. Enjoy!
