It is the chestnut season and for us, it is always a celebration. Here we added them to a classic onion quiche to get an extra nutty taste. It will fill your house with an amazing smell and will warm you on a cold winter night.

Ingredients

  • 1 pack of premade sand dough
  • 5 large yellow onions, cut into halves and then finely chopped
  • 200 g chestnuts in a vacuum pack, roughly chopped
  • 1 teaspoon of sugar
  • 1 teaspoon thyme
  • 1 cup of sour cream
  • 2 eggs
  • 3 tablespoons of all-purpose flour
  • 3 tablespoons of olive oil
  • Salt and pepper

Instructions

Ingredients

To make the mini quiche you need:
3 eggs

12 wonton wrappers
1/2 cup chopped roasted red peppers

Instructions

Pop your flour and butter cubes into a food processor and blend the mixture until it goes crumbly. Next, add the egg yolk along with 3-4 tablespoons of cold water. You want just enough water to make the mixture form a smooth dough.

Prepare The Pastry

When the mixture has gone doughy, lay it onto a floured surface and knead to expel excess air. Cover and chill the pastry in the fridge for a minimum of 30 minutes. Preheat the oven to 375 F.

Stretch It Out

Lightly flour your kitchen surface again and roll the pastry out into a baking tin. Prick the base and line with greaseproof paper.

Bake

It is the chestnut season and for us, it is always a celebration. Here we added them to a classic onion quiche to get an extra nutty taste. It will fill your house with an amazing smell and will warm you on a cold winter night.

Ingredients

  • 1 pack of premade sand dough
  • 5 large yellow onions, cut into halves and then finely chopped
  • 200 g chestnuts in a vacuum pack, roughly chopped
  • 1 teaspoon of sugar
  • 1 teaspoon thyme
  • 1 cup of sour cream
  • 2 eggs
  • 3 tablespoons of all-purpose flour
  • 3 tablespoons of olive oil
  • Salt and pepper

Instructions

  1. Preheat the oven to 350°F.
  2. In a large pan, heat the olive oil and add chopped onions and sugar. Cook over low heat for 20 minutes and stir occasionally.

  4. In a separate bowl, mix sour cream and the eggs and season with salt and pepper.

12 wonton wrappers
1/2 cup chopped roasted red peppers
1/2 teaspoon salt
1/2 cup finely chopped spinach

Instructions
