There’s no campfire required for this recipe and when the brownies are almost done baking, add chocolate chips, marshmallows, and graham crackers on top of the batter. Cook the brownies for another five minutes and enjoy!

Healthy-ISH cream cheese swirl brownies!!! Seriously AMAZING and so easy!!! Here’s the recipe my loves: . . Brownie Ingredients: 1 stick unsalted butter, cold and diced into 1” cubes 1 3/4 cups @lilys_sweets chocolate chips 2 large room temperature eggs 1 1/2 teaspoon vanilla extract 1/2 cup @lakanto monkfruit sweetener 3/4 cup spelt flour 1/4 teaspoon salt 1/4 cup Dutch processed cocoa powder . . Cream Cheese Topping Ingredients: 8 ounces @organicvalley cream cheese, softened 1/4 cup @lakanto monkfruit sweetener 1 large room temperature egg 1/4 teaspoon vanilla extract . . Instructions: Preheat oven to 350° and line a 9 x 9 or similar sized baking dish with nonstick parchment paper. I use binder clips to hold the paper to the sides. Combine 1 1/3 cup chocolate chips and butter in a microwave safe bowl. Microwave on 22nd increments, starring in between, until almost completely melted. Remove an allowed to cool five minutes, stirring once or twice. Scrape melted chocolate into a large mixing bowl and add whisk in eggs, then monkfruit and vanilla, then all remaining ingredients. Fold in remaining chocolate chips. Scrape approximately 1/4 of the batter into another bowl and set aside. Then add the larger amount of brownie batter to the lined baking dish and spread an even layer. Make cream cheese topping: use a standing mixer or hand mixer to cream together the cream cheese and Monkfruit for two minutes, or until creamy and smooth and a little fluffy in texture (I use medium-high speed). Add egg and vanilla and mix until just combined. Spread cream cheese topping over brownie layer, then dollop the small amount of brownie batter over cream cheese. Use a toothpick or knife to swirl brownie batter into the cream cheese topping. Bake brownies for 32-40 mins, or until the top looks mostly set and a toothpick comes out with just a small amount of brownie on it. Cool 1 hour before slicing (I knowwww but it’s worth it!)
