These loaded potato dippers are a winning combination for any occasion. They can be eaten as a snack, a side dish, or as the main meal. Here’s how to make them.
Prepare Potatoes
Chop up as many medium sided potatoes as you want into wedges. Leave on the skins and smear with olive oil. Sprinkle on rosemary to add some extra flavor and season with salt and pepper. Bake for 35 minutes at 400 F or until cooked through.

While the dippers are baking, fry up some onion and little pieces of smoked bacon. Fry until crisp. When the dippers have been cooked, mix in the crunchy bacon and onions. Put on as much cheddar cheese as you want. Bake again for a further 6 minutes.
Finishing Touches
When the dippers are all nice and golden and the cheese has melted, the last thing to do is apply the final tastes. Put on some chopped spring onion and a little red onion. This gives the dippers that extra kick and divine aftertaste.
Serve With Dip
You can choose between dips. The best ones are probably mayonnaise, garlic mayo, BQQ sauce, salsa, or garlic butter.
