The Best Nut Roast Recipe Ever

Nut roast is a great alternative for vegetarians at a winter feast, and this recipe is so good that even the meat eaters may be wanting to try some. Although it uses plenty of nuts, costs are kept down with the inclusion of lentils and chestnut puree. Try it alongside mashed potato, greens and gravy.

Ingredients (to serve 6)

  • 2 cups of red lentils, cooked
  • 3/4 cup of chestnut puree
  • 1 cup of chopped mixed nuts
  • 2 tablespoons of peanut butter
  • 2 tablespoons of butter
  • 1/4 cup of red wine
  • 1 onion
  • 1 leek
  • 1 cup of vegetable stock
  • 1 teaspoon of thyme

Instructions

  1. Melt the butter in a pan.
  2. Add the sliced onion and leek and fry for 10 – 15 minutes, stirring to ensure the vegetables don’t burn.
  3. Add the chestnut puree, cooked lentils, chopped nuts and peanut butter. Stir well.
  4. Add the red wine and vegetable stock, simmer for 5 minutes.
  5. Add the thyme, stir through well, and then transfer to an oven proof dish.
  6. Bake at 350 degrees F for 40 minutes, taking care the top doesn’t burn.

Nut roast is a great option for a winter vegetarian feast. Serve it with cranberry sauce for an authentically festive flavor!
