These Caprese Chicken-Stuffed Peppers are Delicious

Ingredients:

  • 1 pound boneless chicken breasts
  • 1 teaspoon Italian seasoning
  • 1/3 cup shredded basil
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 2 cups cherry tomatoes
  • Salt
  • 2 1/2 cups shredded mozzarella
  • 3/4 cup ricotta
  • 4 bell peppers
  • Balsamic glaze
  • 1/2 cup chicken broth

Instructions:

  1. Preheat oven to 350ºF. Meanwhile, pour the oil into a skillet over a medium heat. Add the chicken and sprinkle salt, pepper, and Italian seasoning generously evenly over each piece. Cook the chicken for about 8 minutes, ensuring that it is golden before flipping it over and cooking the other side. Once cooked, place on a chopping board to cool for about 5 minutes.
  2. In a large bowl, mix basil, ricotta, tomatoes, mozzarella, garlic, and chicken, adding salt and pepper according to taste.
  3. Once the mixture is complete, stuff it into each bell pepper.
  4. In a baking dish, pour the chicken broth and submerge the bell peppers. Cook until cheese is melted, for about 40 to 45 minutes.
