These Cheese Scones Will Keep You Coming Back For More

Cheese scones are a fantastic snack and are hard to beat when served hot with melted butter. Everyone makes their scones slightly differently according to preference. Here is a recipe that will always deliver and keep you coming back for more.

Ingredients

  • 2 cups of plain flour (can swap out for wholegrain flour if you prefer)
  • 1 tablespoon of baking powder
  • 1 teaspoon of salt
  • 1/2 a cup of unsalted butter
  • 3 cups of mature cheddar cheese
  • 2 ounces of parmesan
  • 1 cup of milk
  • 1 teaspoon of French mustard
  • Black pepper

Instructions

  1. Preheat your oven to a high temperature (around 400°F). Line a flat baking tray with baking paper. Meanwhile, in a large mixing bowl mix your flour with your baking powder and salt.
  2. Add small chunks of your butter into the bowl. Mix the butter in with your fingers until it resembles breadcrumbs. Stir in half of your cheddar and all of your parmesan, making sure it’s evenly distributed.
  3. Slowly add your milk and mix so that it is spread evenly. Once it is a slightly sticky dough, add your mustard and mix it in. But be careful not to knead or overmix.
  4. Put your dough on a floured surface, and roll it out into an even layer about an inch thick. Begin cutting circles out of your dough, and place them on your baking sheet. Add a bit of black pepper onto the surface of your scones, and top with the rest of your grated cheddar.
  5. Bake for around 10-15 minutes, until the scones are golden but still spongy in the centre. They are best eaten hot and with butter, but are delicious as a snack on the go too.
