Try This Lemon Posset Recipe for a Sweet Treat

A lemon posset is a quintessentially British dessert that is as delicious as it is simple. The main flavors are the sharpness of lemon and the creaminess of double cream, and it is a great go-to dessert at all times of the year. Here is a recipe to make perfect lemon posset everytime.

Ingredients

  • 2 cups of double cream
  • 1 cup of white sugar
  • Zest of a lemon
  • Juice of a freshly squeezed lemon
  • Mint leaves (optional for garnish)

Instructions

  1. Use a lemon zester to extract as much zest as you can from your lemon. Make sure not to include the pith of the lemon, as this is extremely bitter. Once you have zested your lemon, squeeze its juice into a small bowl and collect as much as you can.
  2. In a small saucepan, gently heat the double cream and sugar on a low heat. Stir it continuously until all the sugar is dissolved. It is good for the mixture to very gently simmer, but do not let it boil.
  3. Remove the cream and sugar mixture from the heat. Pour in your lemon juice and zest and stir thoroughly. Strain the mixture through a muslin cloth to achieve a smoother texture.
  4. Pour the mixture into serving glasses, and allow to cool before putting in the fridge. Refridgerate your lemon possets for at least 3 hours before removing from the fridge. They should be firmly set. Garnish with mint leaves if you like, and enjoy!
