Banana bread cemented its status as one of the most popular baked goods over the course of the last year, and it’s definitely here to stay. If you’ve been trying to master your own recipe but feel it’s not perfect just yet, you may be making one of these common mistakes.

Fresh Bananas

No matter how much you like fresh bananas, they don’t belong anywhere near your banana bread. The riper they are, the tastier your loaf is going to taste. If they’re still too fresh, you’ll have a difficult time mashing them, and using ripe banans is much more practical.

Flour Measurements

The amount of flour you put in your batter can make or break your banana bread. This isn’t one of those dishes where you should get creative, and following the recipe is your best bet. Remember to use measuring cups for dry ingredients, and avoid adding too much or too little flour because your loaf will be too dry or too jiggly.

Over-mixing

If you end up over-mixing your batter, your banana bread will be too tough and rubbery. Gluten will develop as you mix the ingredients, and if you do it for too long, your loaf won’t be as delicious and fluffy as you want.
