Indulge in the comforting flavors of this irresistible cauliflower cheese. With its creamy cheese sauce smothering tender cauliflower florets, this meal is a true delight for the taste buds and a comforting addition to any dinner table. Here’s how to make it.

Ingredients

  • 1 head of cauliflower
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 2 cups of shredded cheddar cheese
  • Salt and pepper to taste
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup of breadcrumbs (optional, for topping)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish or casserole dish with butter or cooking spray.
  2. Place the cauliflower florets in a large pot of salted boiling water. Cook for about 5 minutes, or until the cauliflower is slightly tender. Drain the cauliflower and set aside.
  3. In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously until a smooth paste forms, about 1 minute. Gradually pour in the milk, whisking constantly to prevent lumps from forming. Cook the sauce until it thickens and coats the back of a spoon, about 3-5 minutes.
  4. Reduce the heat to low and stir in the shredded cheddar cheese, reserving some for topping if desired. Continue stirring until the cheese is melted and the sauce is smooth. Season with salt, pepper, and ground nutmeg to taste.
  5. Place the cooked cauliflower florets in the prepared baking dish. Pour the cheese sauce evenly over the cauliflower, ensuring that all florets are coated.
  6. If desired, sprinkle breadcrumbs over the top of the cauliflower and cheese sauce for a crispy topping. Transfer the baking dish to the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown on top. Remove the cauliflower cheese from the oven and let it cool slightly. Garnish with freshly chopped parsley before serving.
