Bursting with freshness and vibrant flavors, this dish features tender salmon fillets baked to perfection with a zesty lemon herb marinade, making it a delightful choice for any occasion. It goes great with potatoes, or you can have it with pasta and it will be delicious. Here’s how to make it.

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves of garlic
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)
  • Salt
  • Black pepper
  • Lemon slices (for garnish)
  • Fresh herbs (such as parsley or dill) for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil. Pat the salmon fillets dry with paper towels and place them on the prepared baking sheet. If using skin-on salmon, place the fillets skin-side down.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, lemon zest, chopped parsley, chopped dill, salt, and pepper until well combined.
  3. Pour the marinade over the salmon fillets, using a brush or spoon to coat them evenly with the mixture. Allow the salmon to marinate for about 15-20 minutes at room temperature, or refrigerate for up to 1 hour for deeper flavor.
  4. Transfer the baking sheet to the preheated oven and bake the salmon for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature of the salmon should reach 145°F (63°C).
  5. Remove the baked salmon from the oven and let it rest for a few minutes. Garnish with lemon slices and fresh herbs before serving.
  6. Serve hot, accompanied by your favorite side dishes such as steamed vegetables, rice, or roasted potatoes. Savor the tender, flaky texture and vibrant flavors of this delicious seafood dish.
