This Chorizo and Bean Stew Will Blow Your Mind

If you’re craving a meal that’s bursting with flavor then this tasty stew is ideal. The rich chorizo pairs perfectly with the creamy white beans, and the combination of herbs and spices in the sauce brings out all the best flavors. This stew is surprisingly easy to make and will transport you to sunny Spain. Serve with potatoes, rice, or couscous for a delicious dish.

Ingredients

(Serves 3-4)

  • 8 ounces chorizo
  • 1 can white beans
  • 1 large red onion
  • 2 cloves garlic
  • 1 red bell pepper
  • 1 teaspoon cayenne powder
  • 1 tablespoon smoked paprika 
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil 
  • 1 can plum tomatoes
  • 1 cup veg stock
  • Salt and pepper, to taste

Instructions:

  1. Finely slice the onion, bell pepper, and garlic.
  2. Chop the chorizo into 1 cm thick discs.
  3. Drain and rinse the can of beans.
  4. Heat some oil in a large pot and add the onion, pepper, cayenne, paprika, oregano, and basil.
  5. Fry for 10 minutes and then add the chorizo.
  6. Cook for another 10 minutes and then add the garlic, beans, salt, and pepper.
  7. Fry for a further 5-10 minutes and then add the plum tomatoes.
  8. Use a wooden spoon to mash the tomatoes up in the pot.
  9. Add the stock, increase the heat, and leave to simmer for 15-20 minutes, stirring occasionally.
  10. Leave to stand for 5 minutes before serving.
