If you’re looking for a simple yet delicious winter meal to keep you warm and satisfy your tastebuds, a cottage pie might just be the perfect choice. Here’s how to make one. And don’t be confused—a cottage pie is made from beef, whilst the other variation, a shepherd’s pie, is made with lamb.
Ingredients
(Serves 4)
- 15 oz ground beef
- 2 white onions
- 3 cloves garlic
- 4 carrots
- ½ cup frozen peas
- 2 lb potatoes
- 2 oz butter
- 1 tablespoon dried thyme
- 1 tablespoon dried oregano
- 1 cup beef stock
Instructions
- Put a large pot of salted water on a high-heat.
- Chop the potatoes into small pieces and once the water is boiling add the potatoes and leave to simmer for 15-20 minutes.
- Meanwhile, chop the onions, garlic, and carrots.
- Heat some oil in a large pan and then add the onions and carrots, frying for 10 minutes until they start to soften.
- Add the ground beef and fry for a further 5 minutes.
- Add the garlic, thyme, and oregano and continue to fry for 5 minutes.
- Preheat the oven to 350 degrees Fahrenheit
- Add the frozen peas and the veg stock to the beef pan and increase the heat to a simmer.
- Leave for 5 minutes.
- In the meantime, mash the cooked and drained potatoes with the butter until they’re smooth.
- Remove the beef pan from the heat and transfer its contents into an ovenproof dish.
- Spoon the mash on top of the beef and vegetable mixture and spread out into an even layer.
- Place into the oven for 20-30 minutes, until the top has browned slightly.
