Fish pie is a rich, creamy, comforting dish that can help banish the blues on a wet and rainy winter’s day. You may feel like it takes too long to make, but check out this recipe – using a frozen fish pie mix, your dinner will be on the table sooner than you think!
Fish Pie
Ingredients (to serve 4)
- 1 pack of frozen fish pie mix (a mix of haddock, salmon and cod works well)
- 2 cups of potatoes
- 4 eggs
- 1 cup of milk
- 2 tablespoons of flour
- 2 tablespoons of butter
- 4 tablespoons of grated cheese
- Salt and pepper
- 1 tablespoon of wholegrain mustard
Instructions
- Make the roux by heating butter in a pan and adding flour once the butter has melted. Stir well, after 2 minutes slowly add some of the milk.
- Stir in the milk until a smooth roux has formed (if the lumps are refusing to budge, blitz it in a food processor). Add the grated cheese and let this melt through before removing the sauce from the heat. Stir in the mustard and a little salt and pepper.
- Peel the potatoes and put them on to boil. Once cooked through, drain and mash them.
- Boil the eggs for 8 minutes, until hard boiled. Slice or dice into small pieces.
- Mix the roux, mashed potato, boiled eggs and frozen fish pieces in a large oven-proof dish. Bake at 350°F for 35 minutes, until cooked through and browned on top.
You can easily adapt this fish pie recipe – try swapping out the potatoes for sweet potatoes, add some frozen peas to the mix, shred cabbage or other greens and add these to the roux. This is a comforting, hearty meal which offers a big dose of healthy protein, too.
