This Marmalade Cake is Our New Favorite Dessert

Ingredients:

  • 1 1/2 cups of all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup of unsalted butter, softened
  • 3/4 cup of granulated sugar
  • 2 large eggs
  • 1/2 cup of orange marmalade
  • 1/4 cup of buttermilk
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • 1/4 cup orange marmalade
  • 1 tablespoon water

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, until well combined. Stir in the orange marmalade, buttermilk, vanilla extract, and orange zest until smooth.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. Pour the batter into the prepared cake pan and spread it evenly.
  4. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. While the cake is baking, prepare the glaze. In a small saucepan, heat the orange marmalade and water over medium heat until melted and smooth.
  5. Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
