This Recipe For Vegan Bacon Is Everything

Bacon is one meat product that is sometimes hard to get over as a vegan. The smokey, crunchy delicatessen seems to make everything better when you’re eating meat. But, if you are a vegan and still crave that same flavor profile and texture, you can still achieve it without having to resort to meat! This vegan bacon recipe is super easy and satisfying and is totally plant-based.

  1. Slice an eggplant in half and then in half again.
  2. Take a very sharp knife or use a mandoline to slice the eggplant into thin slices.
  3. Once that’s done, make the sauce that will go over the eggplant to give it that bacon flavor.
  4. In a bowl, mix together olive oil, tamari or soy sauce, liquid smoke, Worcestershire sauce, maple syrup, paprika, garlic powder, black pepper, and a pinch of salt.
  5. Lay the eggplant slices on a parchment covered baking sheet.
  6. With a pastry brush, brush on the sauce onto both sides of the eggplant.
  7. Put them in the oven for about 20 minutes on very low heat, about 250F. Then, once they’re cooked all the way through, turn up the heat or put on the broiler just for a minute or two to get them crispy.
